post #43 - F5: Banana Milkshakes, Black Bean Chicken Soup, The Blacklist, Renaming Posts, & The Little Things

Happy Friday, y'all! So glad the weekend has {almost} arrived!! 5 things for this Friday...

Banana "Milkshakes"
No recipe or picture needed. All you need to do is peel a few bananas (I used 3), freeze them, and blend them with 2 spoonfuls of peanut butter and a can of low-fat coconut milk (I used Trader Joe's). This might be my new favorite treat, and it's not terribly unhealthy, right?

Black Bean Chicken Soup
Tuesday was really cold here in Columbia. That's not something you hear often, since Columbia, SC is quite possibly the hottest place on the planet. Or, at least in South Carolina. I was so excited to come home (after a day of getting shots, fainting at the doctor's office [a story for another day] and windy weather) to the smell of delicious soup cooking in the crock pot. I saw this recipe for chicken & black bean soup on my friend Paige's blog (check it out here) and decided to give it a try. The greek yogurt and avocado were the perfect toppings to this hearty, delicious soup. We added some extra chicken (because what are you supposed to do with that 3rd chicken breast when cooking for 2?) and the leftovers were just as tasty. Highly. recommend. Fall is officially here people.


The Blacklist
Have you seen this show? If not, set your DVR right now. Best new show of the season, without a doubt!! I won't give any spoilers, but for those of you who like intense shows (Scandal fans out there?) it's just what the doctor ordered for a new fall TV show. Oh, and Elizabeth Keen is a badass crazy character. (P.S. There is no good substitution for the word badass. I tried kind of.)

Renaming My Blog Posts
I usually put a good bit of thought into the content of my blog posts. But the title? That's the tricky part. I can never think of something creative. And there are only so many "Friday Five" titles I can use. Our Life in the Queen City titles her posts by Post #s. I am totally copycatting this idea. So, enjoy post #43 my friends! (Don't worry, you can still search by tag!)

The Little Things
This week, some little things have made me super happy. Things like getting a haircut (3 whole inches, wowie!) catching up with my old roommate over a (free!) wine tasting, wearing a sweater for the first time that i got on sale last spring, going to a nice-ish dinner at Cellar on Greene with my handsome hubby, having our next door neighbors show up at our door with an entire smoked chicken, etc. etc. Sometimes, I get so caught up in big things that I forget to appreciate all of the little things that are happening every day!

We're headed to Clemson tomorrow morning for our 3:30 game against Boston College. Is it time for Florida State yet? I'm also still counting the minutes until I receive the first draft of my new blog design! Any day now. Any day.

Five on Friday, First Week of Football Edition!

Y'all. This has been such a busy week! I have blogged exactly 0 times since last Friday. I've been slammed at work (yup, week 2, but glad to be busy) and have been getting prepared for the fun weekend ahead! The Clemson Tigers have their first home game this weekend against the Georgia Bulldogs. ESPN GameDay will be in TigerTown and I'll be up bright and early, celebrating hard!

So. stinkin. excited. for:

1. Beer
I've been on a fall beer kick already. Last weekend, I tried Pumpking for the first time at the recommendation of one of my bffs. While it was expensive ($7 for a double bottle, holy yikes), it was extra delicious. I also picked up a few Fat Tire Pumpkicks at the recommendation of the beer guy at Publix. It's lighter than some seasonal beers, and has hints of cranberry and spices. Yumyumyum. Give it a try, I bet you'll love it. We'll start with a few "nice" beers, but quickly move to Bud Light. You win some, you lose some.

2. Buffalo Chicken Dip & Funfetti Dip
Yep, after all of the fun appetizers that I posted last week, I settled on two things I've made before. I decided this game was not a time for experiments (some serious, serious tailgating is expected to occur), so I went back to old faithful.



3. Sundresses
There is no better purchase than a wonderful orange gameday dress. Fact.

4. Cornhole
Self explaining. Nothing like a little game before the game. Can anyone explain why this game is so addicting? This was Jordan's big Christmas gift last year and I know these boards will get lots of use this weekend.

5. Friends
Ready to SQUEEZE these people! We usually spend Saturdays tailgate hopping to see everyone. I'm also thankful for a night game so it will be a little easier to make our rounds.

...and of course, can't wait to play with the cutest Tiger tailgater...my niece!

We'll come home Sunday and take it easy on Monday. I think we'll need some Labor Day recovery. Hope you're as excited about your weekend plans as I am!

Five on Friday - Pinterest Edition

Goooooood morning everyone! Hope your weeks have been great. Sadly, this is my last post until AUGUST! I'm getting super pumped for the guest posts I have lined up for the next few weeks. I can't wait for y'all to read them!

I've done nothing but study this week. Like, nothing. It has been so hard balancing studying and being on Royal Baby watch! It's so hard to decide which is more important. I also had this problem while studying this spring and personally attempting to catch the Marathon Bomber from my own home using only internet photos for two days straight. While I thought I was sure to find a lead, luckily, the actual police beat me to it.

All I can think about lately are my upcoming travels and all the things I want to do after the bar exam. DIY, baking, and house decorating are up there on the list, thankya much Pinterest. Since my week has been super uninteresting (unless you want to read a post entirely about Sugar Free Red Bull, Highlighters, and fun phone apps involving multiple choice questions), I'm hitting you up with 5 things I can't wait to do in August, Pinterest style...

1. This iPad stand for cooking in the kitchen (once we get an iPad, that is)


2. Cucumber Basil Sorbet
(hanging on to the little bit of summer I have left)

3. Ginger Cilantro Margaritas

4. Monogrammed Wreath DIY
(because every house should have one of these. and i've been maybe riding around with a wreath in the back of my car to make this since May oops)

5. Read Books That Are Actually Good
So many lists of books, where to begin! After essentially not reading for pleasure for 3 years (with the exception of a few honeymoon books last summer), my list has piled up. And since I'm a firm believer of reading a book before seeing a movie, that means my movies have piled up too. I'm pretty sure I'm the only person on the planet who has yet to read or watch Hunger Games. This book will be an almost immediate purchase in August. Maybe even a car ride-to-Alabama or plane ride-to-Vegas read? 
Once I can check the books I've been waiting to read off my list, I am going to try some of these recommendations: 20 Books to Read In Your 20's.

Linking Up Again - my favorites this week!

Happy Friday, friends! I am so ready for the weekend! This is the first weekend that we haven't had plans in quite a long time. I'm so ready to catch up on studying, puppy playtime, and things around the house!

 It has been a bit of a dull week around here, filled with too many video lectures and too much rain. But, there are still some things that I'm loving this week and that have helped to make the gray Carolina skies a bit brighter!

1. New Color, Y'all!
My nails stink. They will never look this pretty. But after I saw this polish on one of my friends a few weeks ago, I had to try it! After all, this is probably the last summer that I will professionally be able to rock blue nails. These are clearly not my nails - I bite and pick at my nails and they're certainly not fit for a picture. But this color is fantastic, and I love it. [[Sally Hansen Xtreme Wear Pacific Blue]] And it makes my abused fingernails just a little bit happier. That's all.

2. Danielle Bradbery

Monday and Tuesday nights have been a little intense in our household lately. My husband and I started watching The Voice last season and are completely hooked. Last season, I loved Cassadee Pope...but this season, I am a huge fan of 16 year old Danielle Bradbery! Y'all...this girl can SING! She reminds me a lot of Carrie Underwood when she was first starting out on American Idol. (Yes, I watched that season 100 years ago). I love her voice and am constantly impressed with her performances week after week. Not to mention, she's absolutely precious. And her coach is Blake Shelton.

3. Samantha Grace "Ultimate Organizer" Bag

My fifth annual 21st birthday is next week, and I received an early birthday gift from my in-laws on Monday. Since Jo and I are going to Vegas in August (one of my favorite places and I'm soexcitedsoexcitedsoexcited) to celebrate our first anniversary and being finished with the bar exam, my sweet step mother in law gave me this Samantha Grace "Ultimate Bag". It is see through with a cute pattern on the top. Mine is the yellow and white striped one pictured here, but there are lots of options. My favorite feature (and the reason for the gift) is that it can replace a Ziploc bag in carry on luggage and will effortlessly make it through security. (Is that possible? That may be an exaggeration. I don't think going through security is ever effortless) I've never seen these before, but I will definitely be keeping them in mind now for future gifts! And they can go in the dishwasher. Need I say more? (Ahem, conditioner or lotion spill that will literally never stop feeling greasy no matter how many times you try to wipe it out)


4. Birthday Coupons

Ok, I'm not going to pretend not to be loving these. With all the rain, and bar prep, and stuff, I haven't felt like making lunch this week. (Or usually ever, oops). Awhile ago, a sorority sister from college posted on her blog (The Reedy Review) about restaurants that send coupons or give discounts on your birthday. I signed up for several of my favorites then, and had forgotten about them until this week! I plan on cashing in my McAlister's this afternoon, rain permitting ($5 off, not too shabby) and will be enjoying a free Cupcake at Cupcake sometime soon. Probably tomorrow, since they have Salted Caramel Chocolate on Saturdays. Noms. See Laura's post here to see if any of your favorite restaurants do special birthday treats!

(as I said, 5th annual 21st? lets be serious...I will probably be in bed by 10:00 on my bday. mornings come early, yo)

5. Still wanting more Zucchini Pasta...

Can I make this again next week? Is 3 weeks in a row too much? Maybe next time I'll substitute tomatoes for the red pepper. Or add chicken? Or feta cheese? And sub the sauce for lemon, poppyseeds, oil, & vinegar? Hmm. Possibilities are endless. See my post from Tuesday here. Mouth. Watering.

Strawberry Margaritas - In a Cupcake!

Happy Monday! After a weekend full of friend time, my heart is full. I spent Friday with my college girlfriends and their significant others - playing games, eating, drinking, and laughing. Saturday was spent with Jo's college group of friends celebrating a two sweet lovebirds who are getting married in August. We got to hang out with so many people who we don't see as often as we'd like, and it was nothing short of fantastic!

In lieu of weekend activities, I decided to bake a treat. I found a recipe here for Strawberry Margarita cupcakes. We have lots of fresh & frozen strawberries, so I thought this would be the perfect festive dessert. I changed a few things from the recipe I found, and was really happy with the results. Boy oh boy - these were awesome! 

If you need a summer treat, do yourself a favor and whip these up. Fairly minimal effort was involved, and it is a unique dessert to bring to any type of gathering. Fresh strawberry chunks and hints of lime made the cupcakes finger licking good. The icing is even better than the cupcakes - I could probably spread this on anything. Like a spoon. Or my finger. I might even double this recipe the next time I make the cupcakes. I did run out of icing with about 6 cupcakes left, and tried to use fairly minimal amounts since I had to sample so many times to get it just right.

Strawberry Margarita Cupcakes
Yields 24-28 cupcakes, depending on size

Ingredients (Cake)
1 Box White Cake Mix
1 cup Vegetable Oil
4 Eggs
1 Package of Strawberry Jello (3 oz)
2/3 cup thawed frozen margarita mix (Bacardi)
About 1 cup of pureed strawberries (see below) (to taste)

Instructions (Cake):
1) Preheat oven to 350 and line muffin tins.
2) Using a mixer, combine cake mix, vegetable oil, and eggs. Mix in the Jello, margarita mix, and strawberries until completely combined, about 2 minutes.
3) Fill muffin tins (about 2/3 of the way full) and bake for about 15 minutes, until toothpick comes out clean.

(what you need)

Pre-Instructions - I blended about 2 1/2 cups of sliced strawberries, along with about 2 1/2 tablespoons of sugar, in our trusty Magic Bullet. Remember that a cup of strawberries ≠ a cup of pureed strawberries!

(I recommend doing 1.5x or double the frosting recipe, in order to ice all of the cupcakes with a large amount of icing. And, of course, so that you can try some to make sure it is delicious. And is still delicious a few minutes later!)

Ingredients (Frosting)
1/3 cup Strawberry Puree
1 cup softened butter
1/4 c thawed frozen margarita concentrate (Bacardi)
4 cups powdered sugar

Instructions:
1) Beat butter and strawberries on low speed until smooth.
2) Add in powdered sugar, slowly! (I recommend that you use your bowl shield to avoid spraying powder everywhere. Oops!)
3) Add margarita mix and continue beating until frosting is light and fluffy!

Note - wait until the cupcakes are completely cool to frost. I know. It's hard. But will be worth it!
